Carrot Muffin

Because this is healthy and sweet.. 🙂 Because its a little snack and sometimes its a whole meal. Its such a easy recipe and  a great quick fix for sweet craving and something to munch on during your work or while studying. Good for a pot luck and to feed guests at a house party.!!!

This is as I make it..

1. In a bowl, take 2 cups sifted wheat flour, 2 tsp baking powder, 1 tsp cinnamon powder, 1/4 tsp salt.

2. In another bowl, beat 3 eggs, 1 cup of sugar, 2 tsp vanilla essence. Now add 1/3 cup of canola oil or vegetable oil and 2 tbsp yogurt. Yogurt, like oil and butter, helps the muffin to be moist, but this is entirely a personal choice. You can definitely NOT add it. Slowly incorporate the dry ingredients and mix the grated carrots with some raisins or walnuts or pecans. I added 2 large carrots and a handful of raisins.

3. At this time, you should have your over preheated to 170C. Grease your muffin tray or put the muffin liner into the tray or you can grease these cute little silicone moulds like I did and pour the prepared batter in the moulds or tray and bake them for about 20 minutes or until a toothpick inserted comes out clean.
