This is something that I tried and it turned out quite well. Initially, I wanted to stuff potatoes and peas, but decided to try it out with beetroot. I must say that the rolls tasted great and could be a really good finger food for your parties.
For the dough:
- 2 cups of wheat flour. You could use whole wheat flour, all-purpose flour or multigrain flour.
- 1 tsp of oil
- 1/2 tsp salt
- 1 cup of ice cold water.
Mix these ingredients and knead well to make the dough, and let it allow to rest till you prepare the stuffing.
For the stuffing:
- 2 large beetroots grated.
- 4 large garlic cloves finely chopped
- A little piece of garlic finely chopped
- 2 green chilies finely chopped
- 1 tbsp lemon juice, if you like.
- Salt to taste
In a sauce pan, heat 3 tbsp oil and add the garlic, ginger and chilies. Once it is nicely done and brown, add the beetroot and salt. You can either stir fry it or cook it till its well-done. Squeeze half a lemon and mix well and set aside.
Now make small balls of the dough and roll it thin, cut out the ends to make it a square. Now add a teaspoon of the stuffing, make it into a roll and pinch the ends.
By this time you should have your over preheated to 150C.
Brush some oil on the tray and on the rolls and bake for about 20 minutes. In about 8-10 mins, turn the rolls for even baking OR you can definitely deep fry these rolls and enjoy and also with a lot of varieties for stuffing.
