The Classic Pulav

This is one amazing dish that everyone craves for. And it is that easy.

Grind the following ingredients to a fine paste.

  1. Shredded Coconut
  2. Green Chilies
  3. Coriander Leaves
  4. Coriander Seeds
  5. Cloves
  6. Cinnamon
  7. Cardamom
  8. Ginger
  9. Garlic
  10. Salt as per taste
  11. Mint Leaves, if you like.
  12. Some water to grind.

The amount of all these ingredients is as per your taste and preference. The amount would also differ on how many mouths to feed. And you will get something like this –

You should have your vegetables cut by now. I used carrots, green beans, potatoes, green pepper, and green turnip. Green turnip adds it’s own flavor to pulav, and it tastes great. You could also add green peas. Also have some onions sliced.

In a deep frying pan, add about 4 tablespoons of oil, some cumin seeds and onions. Once it is sauteed, add the cut veggies. After about 5 minutes, when its perfectly mixed together, add the ground paste. It would take about 10 minutes on low flame for the veggies to take in the flavor of the ground paste, then slowly incorporate the washed rice. I used about 750 gms of rice, that’s the size of a big glass of water. Let the rice too slowly get the aroma of the masala. Don’t forget to adjust the salt as per your taste.

Add 2 glasses of water according to your measurement of the rice, and let it cook. you will have ready in about 15 minutes. Be sure to cook all it in a low flame, you don’t want to burn your pulav.
