Kodubale – it is called in Kannada. Its a festive food. Its a snack. Its a treat to the taste buds.!
Fried Spicy Rings or Kodubale has as many variations as you can possibly think of. This is one and certainly the easiest and my favorite. This version is called Mosaru Kodubale. Mosaru being Yogurt/curd.
The very few ingredients you will need are
- Yogurt – sour yogurt works best but any plain, unflavored yogurt will do.
- Green chilies
- Cumin Seeds
- Rice flour
- Oil for deep frying
Take about one and a half cup of yogurt and half a cup of water – making it 2 cups in total, and bring this mixture to boil on low flame. To this, add finely chopped green chilies depending on how spicy you would like and salt as per your taste. Now, add two and a half cup of rice flour and slowly stir this final mix. Let it cook for 2-3 minutes. Turn off the heat and let it cool.
If you have a food processor, with a dough kneading attachment, you can use that, or most certainly you can knead it with your hands on a work table. You need to keep adding little water till the dough is soft. While kneading add about a teaspoon of cumin seeds.
Pull out a small piece of dough and rub it through your greased hands and seal the edges to make a ring. Preferably keep them on a greased sheet or pan.
You need to get oil ready for deep frying by now on medium flame. Deep fry them till they are beautiful golden brown. Serve them hot, and with spicy chutney to dip them and you are on for a great treat.!
