Zunka or Jhunka is a very popular dish – gravy made specially made for rice flour or ragi flour rotis, parathas or even rice. Very simple and easy dish to prepare and yes., very tasty.
My neighbor of North Karnataka origin used to prepare zunka quite often as its part of their everyday food. And I did get a chance to taste it on a few occasions. But this was about 15 years back. Last month, I had a chance to drop by their home while on a trip to Chandigarh, Gurgaon and New Delhi, in the small town of Murthal by National Highway 1, Haryana. And there, she made this simple yet delicious gravy for parathas. Trust me I gobbled up 6 parathas just to have more zunka…!!!
You will need –
- 5 tbsp chickpea flour
- 2 onions finely chopped
- 3-4 green chilies or more if you prefer
- 1 tsp cumin seeds
- A pinch of turmeric powder
- Finely chopped curry leaves and coriander leaves
- Salt to taste
- 1 tsp of lemon juice
- A cup of water.
- 2 tbsp oil
In a small bowl, mix chickpea flour and water to make it a thin paste.
In a deep pan, on medium flame, add 2 tbsp of oil. Splutter some cumin seeds in hot oil and add green chilies and onions. Sautee the onions on medium flame and pour in the chickpea paste. Stir the mixture well and turn the heat to low. Add some turmeric powder and salt and cover the pan. Keep in mind, that this dish needs to be stirred well every 4-5 minutes for the heat to transfer well within the flour paste so that its thoroughly cooked (well-done). After about 20-25 minutes, mix in the curry leaves, coriander leaves and lemon juice.
