I have been promising a ‘proper’ chocolate cake to my dear sister Amrita for a long time.!! I finally decided that I make this cake on her big day – the day all of us officially became adults.! – the day she finished her last class 12 board exams.
Here’s the chocolate cake with wheat flour topped with grated copra (the dried kernel of a coconut)
You will need
- 1 cup white whole wheat flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1 tsp salt
- 3 eggs
- 1 cup of sugar
- 1/4 cup of vegetable oil/canola oil
- 1/3 cup of milk
- 1 tbsp of vanilla essence
For the topping
- Melted dark or milk chocolate
- Grated copra
In a deep bowl, sift all the dry ingredients (1 to 4) and mix well.
In another bowl, whisk eggs and sugar till it attains a pale yellow color. To this add oil, milk and vanilla essence and mix well. Slowly fold in the dry ingredients to make it a smooth batter. Watch out for lumps.
Preheat the oven to 160C
Pour this batter in a well greased pan and bake for 20 – 25 minutes or till a toothpick inserted comes out clean. Take the cake off the pan and let it cool completely.
On a double boiler or using the microwave oven, melt some dark chocolate and pour it over the cake evenly, and sprinkle some grated copra and put this cake in the fridge to set.
Serve it chilled or heated with some ice cream.!!!
