Milky Mint Pulav

Anything with mint is either a hit or a miss. And if you happen to taste a ‘miss’ ever, then I can bet it’s going to the last time you are going to have to do anything with mint. Here, I present to you a fool-proof mint pulav recipe.

You will need

  1.  2 one-inch sized cinnamon sticks
  2. 4-5 cloves
  3. 2-3 cardamom
  4. 5-6 garlic cloves
  5. 1 inch of ginger root
  6. 5-6 green chilies
  7. 3 medium sized onions sliced
  8. Handful of mint leaves
  9. 2 cups of rice – washed and soaked
  10. 2 cups of milk
  11. 2 cups of water
  12. 5 tbsp of oil
  13. Salt as per taste

Using a mortar and pestle, coarsely crush ingredients 1 to 3 and keep it aside. Now carefully crush garlic, ginger and chilies.

In a deep pan or a pressure cooker on medium flame, add oil. To it add all the crushed ingredients and let the flavor ooze out into the oil. Then, add onions and cook until it turns translucent. Mix the mint leaves and rice. Once they are nicely combined, add the milk and water mixture and adjust the salt. Stir this rice mixture until it absorbs all the liquid, now cover the lid of the pressure cooker for about 15 minutes. If you are using the 3 piece whistle-weight pressure cooker, I suggest not to put the whistle-weight. You could also make this pulav with milk only (that is 4 cups of milk) and not add water, but I feel it becomes too milky.!!!
