So, in the new year, hoping that it will be a healthy year, here is quinoa salad. It’s funny that I guess whatever and however you make quinoa, it is called a salad.
Simply having quinoa is quite boring, and bland, this is how I make it interesting.
First, cook quinoa in the very basic way. That is, boil 1 cup of quinoa with 2 cups of water on medium flame in a covered pot. It would take about 10-12 minutes to cook. Remove the pot from the stove and take the lid off so that the excess steam doesn’t make the quinoa mushy.
In a different pot over medium flame, add a little olive oil, red chili flakes, finely chopped garlic. To it, add a large onion, thinly sliced and cook till transparent. Now add the veggies of your choice, I added some cauliflower and broccoli florets, baby carrots, snow peas, green peas, red and yellow bell peppers. Add some salt and cook as you like it, stir fry or fully cook it till it’s well done.
Now add the quinoa to the veggies and mix well. I also added a pinch of turmeric and splash of lemon juice. If you do have some coriander leaves handy, do garnish it with them.
Here you have a healthy breakfast, lunch or dinner, and it doesn’t take that much time as well. That’s if you use 2 burners on your stove together. Well, I’ll leave the time management upto you..!!
