I hate yogurt, but I do give it some extra love when it is spiced up. Here I present to you Green Pepper Yogurt Curry, one of the most delicious curries, and the one that’s not so complicated.
You will need:
- 3-4 large green peppers, chopped into large slices. (Most people discard the bulb of the green peppers – but people, that’s where all the nutrients of the green peppers are. At least that’s what my father says)
- 2-3 onions – sliced
- 1 large tomato – chopped
- 3-4 dried red chillies
- 2 cloves of garlic – grated
- 1 1/2 tsp of cumin powder
- 1 1/2 tsp of red chilli powder
- 1 1/2 tsp of coriander powder
- 1 tsp of dried mango powder
- 1/2 tsp of turmeric powder
- Handful of fresh coriander leaves – chopped (optional)
- 1 cup of unsalted yogurt
- Salt as per taste
- 1 tbsp oil
In a deep pan on low flame with a tbsp of oil, add freshly grated garlic. When the aroma of the garlic has oozed out to the oil, break the red chillies into the pan. You can also add red chilli flakes instead. Now put in the sliced onions and sauté them until transparent and mix in the cumin powder, red chilli powder, coriander powder and mango powder. Add the green peppers now and they won’t take much time to cook. When it’s about half done, add chopped tomatoes and let it settle down. Now it’s time to add yogurt. Make sure to beat the curd well before adding it. Mix the curry well. You may want to add a little more yogurt if needed. There is no need to bring the curry to boil once the yogurt is added. Just make sure to mix it well. And last step, do not forget to add some salt as per taste. Also, add the chopped coriander leaves.
