A steamed breakfast or snack, dhokla is one of my favorites and pretty much easy to make.
You will need
- 1 cup of chickpea flour/gram flour
- 3 tbsp sugar
- 2 tbsp fine semolina
- 1/2 tsp citric acid
- Salt as per taste
- 1 cup of water
- 1 tbsp of ginger and green chilli paste, as per taste
- 2 tsp fruit salt
Make a fine paste of these ingredients 1-7. You may need 3-4 tbsp more of water. Now add about 2 tsp of fruit salt and drop some water (about 1/2 tbsp) over the salt. It would start to bubble up. Stir well till the salt-bubbles is mixed well in the batter. Pour the batter to a greased tray and steam for about 15-20 mins. I used an idly stand-steamer for a change. Let it rest for about 5 mins and take it off the tray.
For the tempering
- 2 tsp of mustard seeds
- 5-6 green chillies, chopped
- Some curry leaves
- 3-4 tbsp grated coconut
- 5-6 tbsp water
- 2 tbsp oil
Heat oil in a small pan over low flame and add mustard seeds and wait for it to crackle. Add green chillies and curry leaves. Wait for the flavour to ooze out to add some water and grated coconut. Pour this tempering on the dhoklas. I suggest to cut the dhokla into pieces so that the tempering slides well into the pieces and the dhokla can absorb the taste/flavour of the tempering. Garnish it with chopped coriander leaves.
